Summer Cool-Whip Salad

Another good salad for the summer!  This recipe came from my aunt Karen and is quite sweet- could almost be eaten for dessert.




RECIPE

1 pkg. jello (desired flavor)
1 pkg instant vanilla pudding
1 pkg tapioca pudding - in a box similar to an instant pudding box (I don't think they make instant tapioca anymore)
2 cups boiling water
1 small can crushed pineapple (drained)
desired fruit (I use cut up strawberries)
1 container of cool whip

DIRECTIONS

Mix the jello, instant vanilla pudding, and tapioca pudding together.  Add the two cups boiling water.  Cool until it thickens.  Add the can of crushed pineapple (make sure to press out the excess juice that doesn't come from simply straining it) and the desired fruit.  Finish by adding the container of cool whip, chill, and enjoy!

Feel free to have fun adding a variety of fruit. You can't beat fresh and healthy summer fruit!
